Fruit & Nut Tabouli

1¼ cups boiling water
½ cup bulgur (specialty grains and health food sections of your grocery)
2 tablespoons lemon juice
½ cup dried cranberries
1 apple, peeled, cored and finely chopped (about 1 cup)
2 tablespoons olive oil
¼ cup minced onion
¼ cup finely chopped walnuts
½ cucumber, peeled, seeded and finely chopped
¼ cup finely chopped celery with tops
1 teaspoon grated fresh ginger
¼ teaspoon salt

Measure the bulgur into a bowl; pour the boiling water over and cover with a plate for 20 minutes.

While waiting, put the lemon juice into a large bowl and add the cranberries. Peel, core and chop the apple. Add to the lemon juice and toss together. Add all remaining ingredients, except the bulgur.

After the 20 minutes of steeping, drain the bulgur in a finely meshed strainer, gently pressing out the excess moisture. Add to the bowl of ingredients and serve.

This dish is nice served freshly warm, at room temperature, or cold the next day! Refrigerate unused portions.

This can be used as a salad or a dip. If used as a dip, serve with jicama or cucumber slices!

Makes 8 (½-cup) servings.
